Once or twice a month, I find myself on a weekend cooking rampage, preparing several dishes that will last me ‘til the next time I let loose in the kitchen.

This weekend, I started with Brussels, Sausage and Apple Hash, a one-skillet supper that came together quickly after spin class. (I made a half-batch for dinner one night and another half-batch again for lunch the next day.)

Next: Fiesta Lime Chicken Salad, Natalie Perry’s (healthier!) riff on a favorite Applebee’s dish. (I don’t think I’ve been to Applebee’s since elementary school, thank goodness, but a quick Google search shows the dish is loved. And I understand why.)

And while we’re on the topic of rampages, I can’t get enough of the music by the Nashville cast or Julia Stone, either. I’ve been rotating through “If I Didn’t Know Better,” “Love Like Mine,” “Undermine” and “It’s All Okay” for hours straight.
