Several of my high school besties and I, like, love to cook, which means our potluck parties are always really, really fun. (Um, you’ve probably noticed how frequently we cook when we get together.)
I made apple salsa, which Lauren, in turn, made for me when I visited Fayetteville over the fall. It’s a great dish to bring when you’re trying to bring a semi-healthy/not quite junk food-yhors d’œuvre — diced apple, red bell pepper, purple onion, a jalepeno, cilantro lime juice, honey, salt and pepper, tossed together and served with cinnamon-sugar pita chips.
But my favorite appetizer of the night was Kendall’s oven fries with blue cheese dip, which we all inhaled the fries with a vulture-like ferocity. I’m definitely making that dish for my friends in Columbia! (Someone invite me to a party, pretty please?)
