ten-minute shrimp and goat cheese quesadillas.

When I planned my menu for the next week or two, I didn’t intend to make shrimp and goat cheese quesadillas, but I couldn’t stop myself after I realized I had all the ingredients, even the Trader Joe’s frozen sauteed pepper and onion mix. (I used corn tortillas instead of flour because I’m cutting back on refined flour. The secret to crispy, tasty corn tortilla quesadillas is to coat the tortillas with an eensy-weensy bit of oil before you pop ‘em in the pan.)

And since I didn’t break to take a photo before I gobbled down the quesadillas, I didn’t intend to post the recipe, either. But I can’t help it. Because I can’t stop thinking about these miraculous quesadillas. I needed to share the joy.
